Joel Bukiewicz’s route to entrepreneurship was anything but typical. When Bukiewicz couldn’t sell his first novel, he decided to take a break. And he soon picked up a brand new vocation instead: making knives.
What commenced as a ‘creative outlet’ quickly grew. Today he’s carving out his own niche along with his shop Cut Brooklyn . He’s crafting a number of the most trendy, high end, hand-made kitchen knives yow will discover outside of Japan. Among other things, the knives often feature colorful handles in bright yellow, lime green, orange or purple.
His business now sells worldwide, with prices for his knives pushing the high hundreds of bucks. The waiting list for a knife could be as much as two years. Stock changes frequently at the Cut Brooklyn site, offering a handful of knives at one time with prices starting from around $250 to over $700 dollars per knife. He uses his Twitter feed, @CUTbrooklyn, to alert followers when the newest knives come in, saying something like “fresh knives just went up!”
On his website, Bukiewicz explains :
“My mission is to construct you a stunning knife that performs on the very highest level for a life of service and pleasure.”
Bukiewicz began with hunting and sports knives. But within four months there has been a waiting list online for his work. The mild success excited him, and he continued to adapt his craft, spending two years attempting to perfect the kitchen knife.
Then, Bukiewicz was approached by Edible Brooklyn photographer Michael Harlan Turkell about doing a narrative on his craft. The object that Turkell wrote was read and shared all over the world. Soon after, orders began picking up.
Cut Brooklyn is legendary for 2 signature knives, called the chance 240 and the chance 120 Petty. However the shop also sells butcher, boning, and filleting knives. Each knife takes around fifteen hours to craft and is entirely made by hand. The sole thing done out-of-home is the tempering process for the steel.
Bukiewicz was approached by famous chefs wanting to buy his knives, but these should not the shoppers he specializes in the foremost. In an interview, he told Nona Brooklyn :
“…I sell knives to people worldwide, however the big majority of my customers live within a number of miles of the store. And I’m really happy with that. I’m way more pleased with that than I ever am of marketing a knife to someone who happens to be famous.”
